Stove-top Grilled Peaches & Cream

Serves 4

Ingredients 

  • 2 Tbsp granulated sugar
  • 1/4 tsp ground cinnamon
  • small pinch fine sea salt
  • 3 Tbsp cold unsalted butter
  • 2 large, firm, ripe peaches, halved and pitted 
  • 1/4 cup roasted salted pistachios, shelled and coarsely chopped
  • 1 pint top-notch vanilla ice cream
  • 4 sticks cinnamon, optional

When you need dessert in a pinch, good ice cream never disappoints. Add ripe juicy peaches, quickly caramelized in a grill pan, and, voila: you've just made the easiest almost-elegant dessert. Feel free to substitute nectarines or plums or even halved bananas for a grilled banana split. Use fruit that's ripe but still fairly firm, as it will soften and release juices when grilled.

Instructions

Step 1
In a small dish, stir together the sugar, cinnamon, and salt. Rub the sugar mixture over the cut sides of the peach halves.

Step 2
Place the butter in the grill pan and heat over medium-high. When the butter has melted and is just beginning to sizzle, place the peaches in the pan, cut side down. Lower the heat to medium, and cook the peaches until the flesh softens and the cut surface develops a rich caramelized hue, about 4 minutes. Remove the pan from the heat.

Step 3
Scoop the ice cream into four martini glasses. Nestle a peach half into each glass, drizzle an equal amount of pan juices onto each, and garnish with the chopped pistachios and, if you wish, a cinnamon stick. Serve immediately.
