Ingredients  

  • 8 sugar snap peas
  • 10 cucumber slices (cut ¼ inch thick), plus additional for serving
  • ½ oz simple syrup
  • 2 oz dry gin (Citadelle Gin)
  • 1 oz fresh lemon juice
  • 1 oz club soda

When spring rolls around every year, you can’t help but think about all of the green produce that begins to grow in abundance in your garden. This Spring Fling Cocktail is a play off of a classic Tom Collins that utilizes fresh spring flavors of sugar snap peas and cucumber. Snap peas are a cross between a snow pea and a garden pea which provide a juicy, sweet flavor to this cocktail while cucumbers provide a clean, crisp element. The botanicals of the gin come together to perfectly compliment these flavors. Refreshing and bubbly, this will become your go-to spring cocktail!

Instructions

Step 1
Combine sugar snap peas, cucumber and simple syrup in a cocktail shaker. Using a muddler or the back of a wooden spoon, gently massage peas and cucumber to release their flavors, about 1 minute. 

Step 2
Fill shaker with ice. Pour gin and lemon juice over the ice. Cover, and shake vigorously until the outside of the shaker is extremely cold and begins to frost, about 20 seconds. Line a collins glas with a thinly sliced cucumber and fill with ice. Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the prepared glass.

Step 3
Garnish with pea shoots as desired. Enjoy!
